Easy Meal-Prep: Fresh layered salad

Preparation time: 10 minutes
- Rinse the chickpeas well and season them with a little curry powder, pepper and turmeric .
- Cut the sun-dried tomatoes into small pieces and drain off the excess oil with some kitchen paper .
- Wash the cucumber thoroughly and cut it into small pieces. We have cut them into long strips using a spiraliser, but you are of course free to do as you wish. Stir the protein powder and herbs into the soya yoghurt and season with salt and pepper to taste.
- Now all you have to do is layer the individual ingredients and you have a delicious, healthy and protein-rich lunch ready for the next day.
