Sweet potato toast with a protein-rich lentil spread
Preparation
Preparation time: 20 minutes- Peel the onion and cut into small pieces.
- Grate the ginger into small pieces and fry briefly in a little coconut oil with the onion
- . Add the lentils, spices and tomato purée and deglaze with the vegetable stock. Leave to simmer for 15 minutes.
- When the lentils are soft, you can add the protein powder and blend everything with a hand blender. Leave to cool slightly before serving.
- In the meantime, cut the sweet potato into slices about 1 cm thick and put them in the toaster for 2-3 batches.
- When the sweet potato slices are ready, you can spread the spread on them and top with seeds, herbs or vegetables as desired.
