Sweet potato toast with a protein-rich lentil spread


Preparation time: 20 minutes

  1. Peel the onion and cut into small pieces.
  2. Grate the ginger into small pieces and fry briefly in a little coconut oil with the onion
  3. . Add the lentils, spices and tomato purée and deglaze with the vegetable stock. Leave to simmer for 15 minutes.
  4. When the lentils are soft, you can add the protein powder and blend everything with a hand blender. Leave to cool slightly before serving.
  5. In the meantime, cut the sweet potato into slices about 1 cm thick and put them in the toaster for 2-3 batches.
  6. When the sweet potato slices are ready, you can spread the spread on them and top with seeds, herbs or vegetables as desired.
