Protein-rich potato and pumpkin patties

Preparation

Preparation time: 45 minutes, including baking time

Makes 10 patties

  1.  Preheat the oven to 180°C, cut the pumpkin into small pieces and leave to cook in the oven for around 20-25 minutes.
  2. Clean the potatoes, cut them into small pieces and boil them for about 20 minutes until they are soft.
  3. Take a bowl and mix the oats, protein powder and the spices in it.
  4. Cut the onion, garlic and parsley into small pieces and add all the ingredients to the bowl.
  5. Let the pumpkin and potatoes cool down a little and then add both to the bowl.
  6. Take a fork and mix all the ingredients together thoroughly.
  7. Finally, fold in the peas so that they remain whole.
  8. Heat some coconut oil in a pan.
  9. Form a tablespoon of the mixture into patties and fry them on both sides until crispy.
