Protein-rich potato and pumpkin patties
Preparation
Preparation time: 45 minutes, including baking time
Makes 10 patties
- Preheat the oven to 180°C, cut the pumpkin into small pieces and leave to cook in the oven for around 20-25 minutes.
- Clean the potatoes, cut them into small pieces and boil them for about 20 minutes until they are soft.
- Take a bowl and mix the oats, protein powder and the spices in it.
- Cut the onion, garlic and parsley into small pieces and add all the ingredients to the bowl.
- Let the pumpkin and potatoes cool down a little and then add both to the bowl.
- Take a fork and mix all the ingredients together thoroughly.
- Finally, fold in the peas so that they remain whole.
- Heat some coconut oil in a pan.
- Form a tablespoon of the mixture into patties and fry them on both sides until crispy.
