Juicy carrot cake with protein powder


Preparation time: 1 hour

  1. Preheat the oven to 175 °C.
  2. Mix all the dry ingredients together in a bowl.
  3. Grate the carrots using a food processor.
  4. Now add the carrots and all the liquid ingredients to the bowl and mix everything together very thoroughly.
  5. Now pour the cake batter into a baking tin lined with baking paper and place the cake in the oven for around 45-50 minutes.
  6. Towards the end of the baking time, do the stick test, as every oven is different.
  7. TIP: If the cake gets too dark, put some aluminium foil on the tin. If you like, you can top the cake with icing sugar, icing or chopped nuts.
