Amaranth pancakes with cashew cream

Preparation

Preparation time: 30 minutes

You need soaked cashews for this recipe. So leave them to soak in plenty of water for at least 3 hours, preferably overnight.

  • First put the amaranth, chia seeds, protein powder, some vanilla and the soya milk in a bowl and mix everything together very thoroughly.
  • Leave the mixture to stand and swell for about 10-15 minutes.
  • In the meantime, you can take care of the cream. Rinse the cashews thoroughly under running water.
  • Place the cashews, yoghurt (you can of course use any type of plant-based yoghurt), agave syrup and a pinch of salt in a blender and blend until a smooth cream forms.
  • Heat some oil in a pan and add 2 tablespoons of batter per pancake.
  • Fry on both sides until golden brown, remove from the pan and layer together with the cream.
