This non-proteinogenic amino acid is produced by the body itself and is important for the metabolism. As an intermediate in the urea cycle, it plays a role in the breakdown of toxic ammonia to urea. In the process, L-citrulline is converted into L-arginine, which is the precursor of nitric oxide. Nitric oxide (NO) is in turn involved in vasodilatation.
As a food supplement, L-citrulline is not usually available to buy on its own, but in combination with malate. This is malic acid, which masks the bitter amino acid flavour and provides the typical, slightly sour taste. However, the main reason for this combination is the higher stability of the molecule, so that the L-citrulline can be optimally utilised in the body.
